I love how these melt so perfectly in our raw milk! A sweet treat for a cold April evening. Who knew it would snow??
We really love our ducks. They’ve been a great and fun addition to our little homestead. Did you know male ducks have little curls in their tailfeathers while females tails have all straight feathers? They really love WATER.

My Favorite cheeses are Butterkase, and Gouda. I just finished making two 4 pound wheels of Butterkase and now waiting for it to age 45 days at 53 F.
If anyone knows which culture to use to make Bergase, I would love to know. Not much on the internet about making this alpine cheese.
My research and experience is that BergKasa are cheeses from the Alps and the special milk from the cows they have because of what they eat, elevation etc. And it covers multiple kinds of cheeses. Soft to hard, small holes to big holes etc. Was there a type you really were interested? I would do more northern Germany and Swiss cheese recipes. I love German Cheeses over Swiss but that’s just personal preference!
